Here’s a recipe for delicious and easy-to-make breakfast burritos that you can pre-make for your next camping trip:
Ingredients:
- 8 large eggs
- 8 large flour tortillas
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 cup shredded cheddar cheese
- 8 slices of bacon, cooked and chopped
- Salt and pepper, to taste
- Cooking oil
Instructions:
- Heat a tablespoon of cooking oil in a large skillet over medium heat. Add the diced onions and bell peppers and sauté until they are tender, about 5 minutes.
- In a separate bowl, beat the eggs and season with salt and pepper to taste.
- Add the beaten eggs to the skillet with the onions and peppers. Stir continuously until the eggs are cooked through and scrambled.
- Warm the tortillas in the microwave for about 20 seconds, or on a griddle for a few seconds on each side.
- Assemble the burritos by placing a tortilla on a plate, then spooning a few tablespoons of the scrambled eggs onto the center of the tortilla.
- Add a few spoonfuls of the cooked bacon and a sprinkling of shredded cheddar cheese.
- Roll up the burrito by folding in the sides of the tortilla, then rolling it up from the bottom.
- Repeat steps 5-7 with the remaining tortillas and fillings.
- To pre-make the burritos for your camping trip, wrap each burrito in aluminum foil and store them in a large plastic bag or container.
- When you’re ready to eat, simply heat the burritos over a campfire, on a grill, or in a pan on a camping stove until they are warmed through.
