Breakfast Burritos for Camping

Here’s a recipe for delicious and easy-to-make breakfast burritos that you can pre-make for your next camping trip:

Ingredients:

  • 8 large eggs
  • 8 large flour tortillas
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 cup shredded cheddar cheese
  • 8 slices of bacon, cooked and chopped
  • Salt and pepper, to taste
  • Cooking oil

Instructions:

  1. Heat a tablespoon of cooking oil in a large skillet over medium heat. Add the diced onions and bell peppers and sauté until they are tender, about 5 minutes.
  2. In a separate bowl, beat the eggs and season with salt and pepper to taste.
  3. Add the beaten eggs to the skillet with the onions and peppers. Stir continuously until the eggs are cooked through and scrambled.
  4. Warm the tortillas in the microwave for about 20 seconds, or on a griddle for a few seconds on each side.
  5. Assemble the burritos by placing a tortilla on a plate, then spooning a few tablespoons of the scrambled eggs onto the center of the tortilla.
  6. Add a few spoonfuls of the cooked bacon and a sprinkling of shredded cheddar cheese.
  7. Roll up the burrito by folding in the sides of the tortilla, then rolling it up from the bottom.
  8. Repeat steps 5-7 with the remaining tortillas and fillings.
  9. To pre-make the burritos for your camping trip, wrap each burrito in aluminum foil and store them in a large plastic bag or container.
  10. When you’re ready to eat, simply heat the burritos over a campfire, on a grill, or in a pan on a camping stove until they are warmed through.
